I know that it’s the start of Spring, but here in Michigan the weather can be a little….unpredictable. Just a few days ago it was snowing and today it is 70 degrees. I know, I know never trust the weatherman right? Well I felt like soup and who says you can only have soup in the Winter?
I was never a lover of broth soups, especially if it came from a can. If you told me to eat some chicken noodle soup when I was sick I would refuse. This homemade chicken noodle soup is the best chicken noodle soup I have had by far! I was even craving it, and that’s why I made it! This has been adapted from many recipes I have seen. Enjoy!
Chicken Noodle Soup

Ingredients
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups celery, diced
- 1 1/2 cups carrots, diced
- 3 quarts chicken broth, organic, low-sodium
- 2 tsp chicken base (if desired)
- 2 whole chicken breasts, boneless and skinless, organic
- 1 1/2 cups pasta noodles
- 1/4 cup quinoa
- 2 tbsp parsley, chopped
- dash of salt and pepper
Directions
- Place olive oil, onion, garlic, celery, and carrots in a large pot. Saute on medium-high heat for about 5 minutes until vegetables are softened.
- Add chicken broth and chicken base and bring to a boil.
- Reduce heat to a simmer and add whole chicken breasts. Cook for about 20 minutes until chicken is cooked through.
- Remove chicken. Add noodles, quinoa, and parsley and cook for about 15 minutes until noodles are al dente.
- Shred chicken and place back in soup.
- Add desired amount of salt and pepper. Serve with a slice of toasted bread!
Notes
Gluten-free: Use gluten-free pasta noodles and gluten-free broth.
Vegetarian: Substitute chicken broth for vegetarian broth. Leave out the chicken and chicken base. Add more veggies for a fuller soup!
*Freeze any extras for those days when you don’t feel like cooking.
*Double the batch if you have a larger family. For my family of 2, this was way more than enough!
